Mini Doughnut Mania!!!!

For my birthday I decided I wanted a new baking toy. So off I went to Amazon and bought the Wilton mini doughnut pan. The mini doughnut pan is a must have for anyone with kids or just loves doughnuts. My favorite part is that they are so much healthier than buying deep fried doughnuts and the flavor possibilities are endless. I took only after pictures so here are all the recipes I used. Next time I promise a step by step with a new flavor, blueberry with vanilla glaze. 

Recipe modified from Wilton Mini Doughnut Recipe
~note, do not substitute all purpose flour or margerine~

Cinnamon Sugar Mini Doughnuts

1 1/2 cups cake flour sifted
1/2 cup granulated sugar
1 1/4 teaspoon baking powder
1/8 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup water
2 tablespoons buttermilk powder
1 egg
1 teaspoon vanilla
1 1/2 tablespoon butter melted

Preheat over to 425. Spray the mini doughnut pan with cooking spray. In a mixing bowl sift all dry ingredients. All the melted butter, egg, vanilla, and water. Place batter in pan by the teaspoon. Bake for 4 minutes, cool for 2 in pan, invert onto cooling rack. Glaze when completely cool. 

Cream Cheese Glaze:
2 ounces cream cheese softened
1/4 cup powdered sugar
2 tablespoons milk

cream all together until desired thickness, dip the doughnuts in the glaze and let set. Store in container in the refrigerator. 

Lemon Mini Doughnuts

1 1/2 cups cake flour sifted
1/2 cup granulated sugar
1 1/4 teaspoon baking powder
1/2 teaspoon lemon extract
1/4 teaspoon salt
1/2 cup water
2 tablespoons buttermilk powder
1 egg
1 1/2 tablespoon butter melted

Preheat over to 425. Spray the mini doughnut pan with cooking spray. In a mixing bowl sift all dry ingredients. All the melted butter, egg, lemon, and water. Place batter in pan by the teaspoon. Bake for 4 minutes, cool for 2 in pan, invert onto cooling rack. Glaze when completely cool. 


Lemon Glaze

few drops of lemon extract
1/2 cup powdered sugar
2 tablespoons water
3 drops yellow food coloring

add lemon to powdered sugar. add water until the glaze is thin but will coat the doughnuts. let set on rack. 

Triple Chocolate Mini Doughnuts

1 1/2 cups cake flour sifted
2/3 cup granulated sugar
1 1/4 teaspoon baking powder
1/4 cup special dark hersheys cocoa
1/4 teaspoon salt
1/2 cup water
2 tablespoons buttermilk powder
1 egg
1 teaspoon vanilla
1 1/2 tablespoon butter melted

Preheat over to 425. Spray the mini doughnut pan with cooking spray. In a mixing bowl sift all dry ingredients. All the melted butter, egg, vanilla, and water. Place batter in pan by the teaspoon. Bake for 4 minutes, cool for 2 in pan, invert onto cooling rack. Glaze when completely cool. 


Chocolate Glaze
2 tablespoons butter
1/4 cup chocolate chips
a few drop vanilla extract
2 tablespoons boiling water

Mix all in small saucepan. All water until desired consistency is reached. Glaze and top with chocolate sprinkles.
