Stuffed Zucchini


Stuffed Zucchini 

Ingredients:
1 zucchini
1/2 cup stuffing
1/3 can cream of mushroom soup
half onion
1 TBS butter
2 carrots
1/2 cup shredded cheese





Roast the zucchini and carrots on 425 for 30 - 40 minutes. 


Then add the carrots to onions that have been caramelizing in a pan with butter.


Remove the insides of the zucchini with a spoon leaving just the skin. 


Add the scooped out zucchini to the vegetables in the pan. 


Add the soup and the shredded cheese, Mix well.


Add to the scooped out zucchini skins. 


Bake on 350 for 40 minutes.


Then enjoy!! Super healthy and sooooooo good!!

Banana Split Bites

Banana Split Mini Bites


Awesome, awesome idea from http://www.bakersroyale.com/ice-cream-and-frozen-desserts/banana-split-mini-bites/.  I used this to make my own with help from my little Lyddie.




Ingredients:
Bananas
chocolate for coating, I used almond bark
sprinkles
ice cream

need melon baller
wax paper
knife to cut bananas


Cut banana into 5 big pieces, try to make as straight a cut as you can. 


dip in chocolate.


so easy a 2 year old can do it!!!


Dip in sprinkles. 



cut out enough with the melon baller for ice cream. 


top with ice cream. 


nom!!!!!


hurry and refreeze before it melts!!!

Cheesy Meatballs

Cheesy Meatballs 

Ingredients: meatball mixture
bread crumbs
cheese

*I make my meatballs with 2 pounds 90/10 ground beef, 3 eggs, bread crumbs, Worcestershire sauce and onion and garlic powder*


Have meat, cheese sticks and 1/4 cup measuring cup ready.



Have 1 cup bread crumbs in a bowl.


Cut cheese sticks into 6 pieces each. 


Put mixture into measuring cup. 


Push piece of cheese into it. 


Form into a seamless ball and roll into bread crumbs. 


Place on pan. 


Bake at 350 for 30 minutes! Doesn't that look yummy!!!!

Any kind of cheese works. I like using the colby mix because its versatile for sauces, with rice, potatoes, or for subs.

Cake in a cup



Who would not love a nice warm chocolate cake in less then 5 minutes? No one!!!! There are many versions of the cake in a mug recipe. This is mine that is just as easy, tasty and low calorie compared to many of the other ones. 



Ingredients:
1/4 cup flour
1 tbsp sugar
1 tbsp hershey's cocoa
2 tbsp skim milk
1 egg
splash vanilla
1/2 cup applesauce



Whip the egg up in your mug.




Add 1 tbsp cocoa


Add 1 tbsp sugar


Add 1/4 cup flour. 


Add 1/2 cup applesauce. Its a whole small individual container. Add 2 tbsp milk and dash of vanilla. 


Mix up and cook on high in mircowave 2 1/2 - 3 minutes.


Cake is done!!! Yum



Now take a bite and savor cake in less then 5 minutes. And savor that:

Healthier Comfort Foods - Hamburger Helper Remade

I think we all have had those days where you do not want to cook, nothing looks good and its easy to say to yourself "why not make a box meal tonight?" They are tasty, easy and the downside? Not really healthy for us. My family is on a goal to eliminate most boxed and processed food. My first re-creation is homemade hamburger helped, cheeseburger macaroni. I am dubbing this Cheeseburger Mac from Scratch!!!

Cheeseburger Mac from Scratch

Ingredients
ground beef, 1 lb. I use 93% lean
seasonings, I use garlic and onion
Worcestershire sauce
3 cups pasta
1/3 cup colby cheese
 1/3 cup cheddar
2 slices cheese
1 1/2 cups water
1 1/2 cups milk


Gather all ingredients. 


Brown ground beef and add seasonings and Worcestershire. Drain when fully browned. 



Measure out 3 cups pasta. You can use any kind.  


Measure out milk and water. 



Add pasta, milk, water and all shredded cheese to pot. 


Bring to a boil. Cover and turn to low. 



See low!!


Mix once or twice while cooking. Set timer for 15 minutes. 



After cooked add the two slices of cheese. Mix.



Let set 5 minutes and eat!!! It was really good. A little runny but set up perfectly after the standing time.

Gardening Take 2!

Gardening Take 2!! 

Everything is growing!! If you want to garden but are afraid of all the work, start small like we are and plant some of your favorites in a planter or two.



The roses are just starting to bloom!! These were taken on April 3rd. 



The strawberry plant is growing! Slowly but surely it is growing!!



The broccoli is getting huge! 


The onions have about 5 weeks left!


Good ladybug doing some bug patrol for us!


We have tomato flowers!



The other rose bush. 


We planted two more blueberry bushes. The more the better the chances are for better tasting fruit because we learned that they are self pollinating!!
